Students will learn:

evidence-based principles of the formation of functional and specialized products for the prevention, correction, and rehabilitation of the body functional state and assess their effectiveness in test environments;

physiological, biochemical, and social aspects of nutrition and their impact on human health, the latest achievements in food technologies to create products that contribute to the restoration of the body's vital functions and active aging; the relationship between political, economic, social, and cultural factors, environment and food quality, food availability and human health;

principles of integrative selection of means for modeling the composition of products with specified properties, methods of differentiation, quantitative and qualitative determination of the main nutrients and biologically active substances, as well as the conditions for the sales of the enriched product and existing restrictions;

strategies for creating products for personalized nutrition based on the results of the blood biochemistry analysis, intestinal microbiota, and genetic tests, as well as the family history and the lifestyle of a particular person.

unique nutritional characteristics and needs of various target groups, in particular, people with various types of metabolic disorders, impaired swallowing and loss of appetite (enteral nutrition), herodietic nutrition, etc.
Specialization
The Functional & Specialized Nutrition specialization is devoted to the specifics of producing nutrient-dense foods essential for children, pregnant women, and athletes. It also pays particular attention to special products for active aging: their creation, health programs, and ways to improve the quality of life.
